Cucumber & Avocado Salad


I love to prepare a healthy salad to eat with my meals. The best part is choosing ingredients that I known I love, so later I do not have to pick anything out of the salad and miss out on vital nutrients that the whole meal would provide.

Why I Love This Salad

If you love avocados like I do then this is the salad for you. I enjoy adding all my veggies together and mixing them with my avocados for that creamy taste. When to mix all together the cucumbers add a crunch to the mix, adding the tomatoes add a little extra juice. Adding some cilantro put a splash of green all over the salad. Now I love the red onions slices for the added spicy taste to the salad. Now adding a little salt, black pepper, and lemon juice bring the salad together for that last smooth, spicy, creamy bowl of goodness.

Ingredients: $12-14 total

-1 English (European) Cucumber $3.99 -Five small Roman Tomatoes $1.48 -2 Avocados $3.33 -1 Bunch of Cilantro $1.99 -1 Red Onion $0.66 -One pinch of Salt -Two pinches of black pepper -1/2 tbsp. of lemon juice -2 tbsp. of Extra Virgin Olive Oil

Directions:

Prep time: 20 minutes -Start by gathering all your ingredients listed to make your salad

-Now you will need two bowls, one smaller bowl and a large salad mixing bowl or just a large bowl

-Now start cutting the cucumber, tomatoes, onion and cilantro and add them to your bowl

-Now cut your avocados and add them on top of the salad

-Now we are going to add the salt and black pepper to mix all the salad together with a spoon or fork -All you have to do now is separate each serving on your plate and add about 1 to 2 tbsp of extra virgin olive oil. Serving: Four servings of 3 inch Bowl or 2 servings of 7 inc. bowl
